If you’ve lost your appetite from summer heat, it’s time for “Ochazuke”, a soothing, easy-to-eat rice bowl! This beloved Japanese dish is made very simple by pouring hot green tea, boiled water, or dashi (Japanese both) over steamed rice with toppings like grilled fish, pickled plum, dried seaweed, crunchy rice puffs, etc. During summer, it’s enjoyed as “Hiyashi Chazuke” (cold ochazuke) with chilled tea or cold dashi instead.

Today’s ochazuke is from Sinbashi Tamakiya, a tsukudani (rice topping using seafood) shop born in 1782. Each packet includes small fish slices, dashi, and dried toppings (i.e. dried seaweed, rice puffs, sesame, mitsuba leaves). All you need is a bowl of steamed rice and boiled water! After placing all toppings over rice, pour boiled water and add dashi to enjoy the savory flavor! Quickly prepared yet authentic, and the fish was so flavorful!

This time I tried salmon and sea beam flavors, but other various flavors are available including sea urchin, asari clam, and cod roe. These will make a great late night meal too!
