What’s the different between “yokan” and “mizu yokan”? Mizu yokan is a lighter version of yokan (dense sweet bean jelly) and often enjoyed during summertime. (Some cold regions enjoy during winter!) It uses less agar, less sweet bean paste, less sugar, and more water compared to normal yokan. Just like its name “mizu” (meaning “water” in Japanese), it’s refreshing with smooth, watery texture.

Many sweet shops start selling their mizu yokan around June, and today I picked up mizu yokan from KINOKUNYA supermarket. Its shiny, juicy surface looks so delicious! I notice a hint of saltiness in the sweet taste. This is because seaweed salt is used! Love the delicious contrast of sweetness and saltiness!
