A day at Hakone Akatsukian starts by the soba artisan making soba. The ingredients of the Hakone Akatsukian's are Japanese buckwheat flour that is milled at the store and flour that is used as a thickener. The soba called "nihachi soba" (literally means "two-eight soba") is made by using the buckwheat flour and flour in a 2:8 ratio.
