 The conger eel that is sent directly from the market is sted for 15 to 20 minutes, lightly roasted over a fire before serving, and finally topped with a homemade sauce, making it a signature dish of the restaurant. The texture is so soft and fluffy that you don't feel like you are eating fish, and the sauce is not too sweet, which enhances the sushi even more.

 Even people who do not like blue-backed fish have become fans after trying this sushi. The red vinegar and salt flavor is tangy, yet very mild. The surface of the sushi is made with a special "decorative knife," which is a gorgeous way to make sushi.
